By Kathrine Franks

Different cuisines and cooking styles are seen in the many regions and cultures of this world. Many appreciate the foods they grew up eating, especially the ones that are tied to their culture and heritage. Lavash is the name for a type of flatbread said to originate in Armenia. People have been eating this food for years, all around the world. Also called Armenian lavash bread, this is often prepared homemade. However, there are restaurants and stores that have it available, including some in Los Angeles CA.

Lavash is known for being thin and soft. The unleavened flatbread is made in tandoor. This is consumed in many places, but especially in the area of Caucasus, Western Asia and locations nearby the Caspian Sea. This is the most popular bread in Armenia, Iran and Azerbaijan.

Flour, salt and water and the main ingredients. The thickness will range depending on how it is rolled. Sometimes sesame or poppy seeds are added to the top of the bread prior to it being baked.

The traditional way to make this is by rolling the dough out flat. It can then be slapped against the hot, clay oven walls. When eaten fresh, it is pliable. It does not take long for this to dry out and become more brittle and crispy. The softer version is often used for making wrap sandwiches. When dried, this can be stored for up to a year and may take the place of leavened bread when it comes to Eucharist traditions of the church.

In Armenian villages, people are likely to see the dried food stacked for later use. Before eating, sprinkling water atop this can rehydrate it and restore its flexibility. The dry lavash might also be employed for quick meals after it has been rehydrated and other ingredients are added. The dried food may also be broken into smaller pieces and added to a dish known as khash.

Fresh out of the oven, this is often used as a wrap that contains herbs, cheese and other ingredients. In Iran, Turkey and other middle east areas, this is used along with kebabs to create special wraps. It is a staple of Armenia cuisine. In Kashmir, this flatbread is referred to as lavase and is a basic food item that locals eat on a regular basis, often with breakfast. It is also tradition for these people to give it as a symbol of food abundance or good omen.

Lavash is popular in dishes and also in art. That is, many Armenian painters have been known to portray women baking this in artwork. The pieces are on display in museums worldwide. In fact, there is even a famous painting of this kind found in the bicentennial collection of the White House. Art featuring this food is available in many forms.

There are many recipes that call for this food item. The Internet can be used as a source for recipes, but some people gather recipes passed down from family. This bread can be added to many different dishes, soft or hard. It is a cuisine staple for Armenians and is enjoyed by people of other cultures and areas too.
